The Best Christmas Rocky Road Recipe


This Christmas spin on a chocolate favourite is the perfect treat for the festive season! With delicious chocolate, sweet raspberry lollies, crunchy biscuit and soft gooey marshmallow, it’s like a taste of Christmas with every bite. Plus, this recipe requires no baking and can be prepared in just 10 minutes!  


  • 500g milk chocolate
  • 250g clinkers
  • 100g marshmallows
  • 200g raspberry lollies
  • 50g desiccated coconut
  • 50g shortbread OR amaretti biscuits


Line a rectangular baking tray or slice tray with baking paper. Chop the lollies into smaller pieces, and any other ingredients you would like (see note below).

Fill a small saucepan with water and heat on the stove. Place chocolate into a heatproof bowl and place it on top of the saucepan, so that the heat from the water can slowly melt the chocolate. Stir consistently until the chocolate is completely melted and smooth.

Add the marshmallows, raspberry lollies, clinkers, coconut and biscuit to the chocolate and stir to combine. Aim for each ingredient to be coated in chocolate.

Spread the mixture into the prepared tray and place in the fridge. Leave to set for two hours. Cut into pieces and serve! 


  • Swap milk chocolate for dark chocolate if you prefer a deeper and more intense flavour to counteract with the sweetness of the other ingredients.
  • You can keep the ingredients whole for a chunkier rocky road, or chop into smaller pieces.
  • Add a splash of peppermint essence when melting the chocolate down if you would like to add a minty, candy-cane flavour to your rocky road.
  • When serving, use a sharp knife to slice the rocky road. If it’s getting stuck, run the knife under hot water for a moment and then dry before trying again – the heat will help the knife glide through.
